Our rhubarb and raspberry crumble has seven ingredients and only two steps in the method.
This crumble topping sits on top of a tangy, juicy combination of soft rhubarb and raspberries that have burst to release all their flavour. We like to serve the crumble with custard but double cream or ice cream are excellent choices too.
Ingredients
For the crumble topping:
- 100g (3½ oz) plain flour
- 100g (3½ oz) porridge oats
- 100g (3½ oz) butter
- 100g (3½ oz) demerara sugar, plus 2tbsp for filling
For the filling:
- 500g (1lb) trimmed rhubarb, cut into chunks
- 150g (5oz) raspberries, fresh or frozen
- 2tsp cornflour
- Custard or ice cream, to serve (optional)

Method
- Heat the oven to 190C (170C fan, Gas 5). To make the crumble, mix flour and oats in a bowl. Rub in butter, keeping it lumpy. Stir in 100g (3½ oz) sugar.
- To make the filling, mix the rhubarb, raspberries, 2 tbsp of sugar and cornflour in a 1.2 litre baking dish. Spoon the crumble over and bake, on a baking sheet for 30-40 minutes until golden and bubbling. Serve with custard, if liked.
Top tips for making a rhubarb and raspberry crumble
Feel free to add blackberries too if you want a crumble that's slightly more tart.
Why is my rhubarb crumble watery?
Rhubarb has a high water content and when it is cooked this is released. The cornflour that is mixed into the filling will help thicken these juices but if it’s still too watery, consider using less rhubarb in your next crumble.
Should rhubarb be cooked before baking?
It is not necessary to cook the rhubarb before baking as part of a crumble but for a stove top version you could certainly stew the rhubarb with sugar in a saucepan until soft. Cooking it out on the hob before will also help you evaporate some of the juices and reduce the likelihood of a very wet crumble.
What goes well with rhubarb and raspberry crumble?
White chocolate compliments the tart rhubarb and raspberry flavour well. Consider adding some chopped white chocolate chunks to the topping 5 minutes before the end of cooking. It will melt slightly and give an extra hit of indulgence.
